Have you ever come across a recipe that you had no idea how someone could create such an amazing dish or how how you didn’t know such a delicious meal could exist? There are two times that I’ve come across something so memorable. The first: My Dad’s Chicken Alfredo Recipe & now this Chicken Tacos recipe which I’m about to tell you about.

For this post, I’m going to take a stab at a Recipe Review specifically because this recipe needs to be told to the world. You’ll see when you try it yourself.

We tried this meal on a Saturday. We also had our friend stay with us so she joined us for dinner. [lucky her!] So to just state this for record – this recipe is so good because of one of the following:

  • Keri from www.fashionablefoods.com is a taco making genius
  • My husband is a master chef
  • I had one too many sangrias (probably this one)

30 Minute Pulled Chicken Tacos

Chicken Tacos

First and foremost, I’d love to give all the credit to this blogger at Fashionable Foods for providing such an amazing recipe. Below I will talk about what types of things we changed but the original recipe post can be found here: Pulled Chicken Tacos Original Recipe however, here is our recipe version with the changes we made already built in.

 

Chicken Tacos

Making the Chicken

  • 3 Chicken Breasts
  • 3 tbsp Homemade Taco Seasoning, divided (see below)
  • 1/2 cup Chicken Broth
  • 1 1/2 tbsp Tomato Paste
  1. Coat the chicken breasts with half of the taco seasoning and place them in a deep skillet with a lid. Pour the chicken broth in the skillet and add in the onion. Cover and bring the liquid to a low simmer. Allow the chicken to poach for 20 minutes, or until cooked through.
  2. Pull the chicken using 2 forks or in the bowl of a stand mixer fitted with the whisk attachment.
  3. Add the shredded chicken back to the pan with whatever broth remains. Add in the remaining taco seasoning and tomato paste. Allow it to simmer for 5-10 minutes – adding more broth if it seems to be drying out at all.
  4. Assemble the tacos by heating up your corn or flour tortillas in a skillet or over a gas flame. Start by adding some pulled chicken and then top with whatever toppings you like!

White or Yellow Corn Tortillas (any brand)

Tomatoes (fresh from the market)

Romaine Lettuce, finely chopped

Fresh Squeezed Lime

Cilantro (fresh from the market)

Black Beans

Block Cheddar Cheese, shredded

Sour Cream

 

Taco Seasoning

2 Tablespoons Paprika

4 Teaspoons Chili Powder

4 Teaspoons Oregano

2 Teaspoons Garlic Powder

2 Teaspoons Ground Cumin

1 Teaspoon Kosher Salt

1 Teaspoon Black Pepper

1 Teaspoon Onion Powder

¼-½ Teaspoon Cayenne Pepper, optional

What Changes Did We Make

  • Went from 8 servings to 6
  • The amount of time was longer to put together about 10 extra minutes
    • this was due to having to put together the taco seasoning as well as making sure the chicken was fully cooked to 165F (internal temperature)
    • if you have never pulled chicken before (like us) – this adds extra time
    • toasting the tortillas also adds time but 100% worth it
  • Did not use the onion that was called for
  • Added black beans & a squeeze of fresh lime

5 Reasons YOU need to try this recipe

  1. The recipe is relatively quick and probably quicker the 2nd, 3rd, 4th time you make it (because we all know one time just won’t cut it)
  2. Corn tortillas are so.much.better than flour! Wow!
  3. With the exception of the sour cream (aint no body going to take this away from me) the meal is pretty fresh and healthy
  4. They make amazing leftovers and I am not a leftovers eater
  5. Easy on the budget especially for how fantastic the quality is.
  6. okay — I realize I said 5 but listen, there are so many great reasons. It is mouthwateringly good.
